Why do I care? I care because these gals are part of my writing family at The Writers’ Nest. We share manuscripts at our meetings but more than that, we laugh, cry, visit and encourage one another. Congratulations one and all!!

Your Favourite Sandwich?

Blogger Belinda Burston is a great fan of Victoria Sandwich Cake . So here is the question for you today. What is your favourite cake or for that matter your favourite sandwich? Share won’t you?

The Message Bible offers up 25 verses including the word sandwich. The Amplified Bible lists 40 verses mentioning cakes, every kind from barley to date and raisin but no sandwiches !

1 Chronicles 16:3

And he distributed to everyone of Israel, both man and woman, to everyone a loaf of bread, a portion of meat, and a cake of raisins.

Belinda’s Mom

As a follower of Belinda’s blog (Whatever He says) I feel like I know her family. Her Mom has been in poor health for quite a while and she just passed into the arms of Jesus. Two lines from her last blog caught my attention.

The first from a beloved Grandaughter

‘”It’s Uncle Bob,” she says, between her soft sobs, “Omie has died.”

The next from Belinda’s brother, Rob who was with Mum when she passed.The kindnesses of the nurses comforted him.  He said. How sweet kindness feels to a heart that is laid raw.

What a profound statement. I understand that so well because of the many kindnesses to me over this past few months.

So if you will…pray comfort and peace for the family. Pray that their raw hearts will begin to experience the tender healing of the Lord Jesus Christ. Amen

Irish Potato Make Ahead

Irish Potato Casserole

My dear friend and fellow writer and blogger, Brenda Wood; asked me for this recipe after I served it at our writers group Christmas dinner.

Irish Potato Casserole

Recipe shared by: Carolyn Harman, Harrisonburg, Virginia;Parkview Mennonite Church
8-10 medium potatoes, peeled
8 oz package cream cheese
8 oz sour cream (I replace this with 8 oz Greek yogurt)
½ cup melted butter
¼ cup chopped chives or green onions
I clove garlic, minced
2 tsp salt
1.       Cook potatoes and mash. (Do not add any liquid.)
2.       Beat cream cheese with electric mixer until smooth. Add potatoes and all other ingredients except paprika. Beat until all ingredients have combined. Spoon into lightly greased 2 quart casserole dish. Sprinkle with paprika, cover and refrigerate overnight.
3.       Uncover and bake at 350 degrees for 30 minutes or until heated through.
